Subscribe to feed. Other hosted options include pbWiki , Stikipad (see comments), Wetpaint and Wikia. It is however easy to set up and open source. Test it out on some of your initial group to get their thoughts. Now invite your initial group to come onto the wiki en-masse to start collaborating on the content.
